Chorizo Chilli.
Ingredients
- 110g chorizo sliced
- 500g minced beef
- ½ tsp cocoa powder
- 1 tsp dried oregano
- 15ml tablespoon tomato paste / puree
- 400g can of chopped tomatoes
- 2 tsp worcestershire sauce
- 400g can of kidney beans (drained and rinsed)
- sea salt flakes (to taste)
- freshly ground black pepper (to taste)
- chopped fresh coriander to serve (optional)
Method
- Fry chorizo in a large saucepan for a few mins.
- Add the mince, fry until broken up.
- Add the cocoa, oregano, and tomato paste and tinned tomatoes, stir well.
- Add the Worcestershire sauce and kidney beans.
- Turn the heat down low, and let the chilli simmer gently for 20 minutes.
- Season and serve immediately with fresh coriander.
